Here are a couple that sound weird, but if he's not a picky eater, they're nutrient-packed and very easy to make. I used them often in my Ironman training, because I was too tired to fix fancy meals. Bonus: all recipes leave only one bowl/Pyrex to clean.
1- Put tortilla chips in a bowl or round Pyrex. Crush them into smallish pieces. Add tuna fish. Pour on spaghetti sauce. Stir. Eat.2- Place spinach in a bowl. Add Perdue Short-Cuts Pre-cooked chicken strips (multiple flavors available). Optional: add cheese. Add salsa on top. Eat.
3- Use microwave to make 4 oz packet of Idahoan Mashed Potatoes in a round Pyrex. Add either Perdue Short-cuts or tuna fish. Drain can of green beans and add to the mixture. Eat.
You left out your tuna fish and dry Top Ramen recipe.
